PRODUCTION 


“Fattoria Scirinda” farm handed down over the years a top class olive-growing culture, here we merge secular experience with modern quality standard in order to provide a top quality extra virgin olive oil. Plants are grown to a height of 3-4 meters, thus allowing manual harvesting, through a process called combing, where you pass the wooden combs to fondle the plant to drop the fruit into the net laid into the ground below.


Then olives are spilled in plastic boxes well ventilated and quickly transported  to the oil mill where start a mechanical processes that lead to extraction of olive oil  from olives. Olives at the mill begin production’s process, since are loaded in extraction machine are settacciate, washed and pressed in order to obtain an oily paste, that is left grinding one hour circa, before being centrifuged to separate the solid paste from the oil. This extraction process occurs naturally and without chemicals.


This is how to obtain such a high quality product which is stored in a cool, dry place, protected from oxidizing agents, ready to be bottled. Increasingly sensitive to consumers needs, more attentive to genuineness of the products, and in compliance with environmental issues, “Fattoria Scirinda” farm follow Regulation (EEC) 2078 of 92 1 measure concerning the restriction on adoption of pesticides, avoiding those use.
